1 beef roast good for cooking in the crock pot
3 to 4 beef bouillon cubes, depending on size of roast
apple juice to cover 1/2 of roast (not cider)
1 package dry brown gravy
Place roast in crock pot. Mix gravy with some of the hot apple juice to dissolve the powder gravy and
pour over roast. Add more of the apple juice to cover about half the roast. Add bouillon cubes. Cook
for several hours until roast is tender.
Gravy
I strain the liquid from the crock pot to have a smooth liquid and then add a mixture of cornstarch and cold
water or apple juice, mixed well, to the boiling liquid. Add cornstarch mixture slowly so it doesn't thicken
too much. Add salt and pepper to taste.

Herb and Lemon-Scented Tilapia
Ingredients:
½ cup minced fresh chives
1 cup minced fresh Italian parsley
¾ teaspoon salt, divided
3/8 teaspoon black pepper, divided
1 large lemon
¼ cup unsalted butter, divided
1 pound tilapia fillets (large fillets if available)
Butter- or olive-oil flavored nonstick cooking spray
Directions:
On a platter, combine chives, parsley, ½ teaspoon salt and ¼ teaspoon pepper.
Grate rind from lemon over herbs. Toss to combine. Reserve lemon.
Spray tilapia fillets with butter-flavored or olive oil-flavored cooking spray.
Press fillets in herb mixture to coat both sides.
In large skillet, melt 2 tablespoons butter over medium heat. Add tilapia.
Cook 3 to 4 minutes per side or until firm and white in center. (Cook time
will vary according to thickness.) Remove to serving platter. Keep warm.
Add remaining 2 tablespoons butter to skillet. Melt over low heat.
Cut lemon in half; squeeze juice from one half into skillet.
Season lemon-butter mixture with remaining ¼ teaspoon salt and
1/8 teaspoon pepper. Stir well. Pour over fish. Slice remaining
lemon half for garnish. Serve immediately.
Makes 4 servings

Sweet and Sour Meatballs
INGREDIENTS:
13 ½ oz pineapple chunks
¼ C brown sugar
¼ C vinegar
2 T cornstarch
2 T soy sauce
2/3 C chopped green pepper
DIRECTIONS:
Drain pineapple and add enough water to make 1 C of juice. Combine everything else and boil until clear. Add green pepper and pineapple. Pour over meatballs. Heat at 375 for 30 minutes or until internal temperature is 165 degrees.

Spinach & Mozzarella Ravioli
Ingredients:
Ravioli (frozen from Costco)
1 Jar of marinara sauce
Italian herb cheese
Directions:
Add ravioli to 8 quarts boiling water. Ravioli are fully stuffed, so cook at a very gentle boil so filling won't leak. Stir frequently. Cook for a total of 7-9 minutes. Drain and transfer into a large mixing bowl. Add marinara sauce and sprinkle Italian Herb Cheese packet to taste.

Poppyseed Chicken
Ingredients:
5-6 chicken breasts, roasted, cut into bite size pieces
1 can cream of chicken soup
1 can of mushrooms, drained
1 C sour cream
1 cube butter
1 sleeve Ritz crackers, crushed
2 T poppy seeds
Directions:
1. Combine first 4 ingredients and put in 9x12 casserole dish.
2. Brown remaining ingredients and spread over chicken.
3. Cook @350 for 30 minutes.
4. Serve with rice.
